The DOP Umbria ColliMartani Extra Virgin Olive Oil is our ” flagship ” and our pride.
The Monocultivar Moraiolo is produced only from olives of the Moraiolo variety, our typical cultivar, and has a strong, bitter and spicy taste.

The olives are harvested at the beginning of the season, when the fruit is still unripe and contains all the organoleptic characteristics.

The grounds and olives are all certified in order to guarantee traceability.

The fruit of this plant, one of the most renowned and precious olive cultivars, is small in size and spherical in shape. The colour changes from an unripe green to purplish, until it turns black at the end of maturation. The oil yield of this olive tree is very high.

The olive oil which come from this variety has a high amount of polyphenols and oleic acids, while the saturated fat intake is low. These characteristics mean that the quality of this olive oil is very high.
